Sujihiki "Honyaki"
Forged in C130 steel (a steel made in the 90's in a factory 30km from my place)
Selective water quench without clay.
Blade length is 214mm, 36mm high at heel, 1.8 to 0.9mm before tip, 119 grams.
Handle is made from bog oak and darken stainless steel bolster.
Very thin blade for slicing meats and fishes.
I build the blade with wide bevels and shinogi. Top of the blade is etch and poished. Bevels are sanded for contrast.
