Gyuto "Honyaki"
Forged in C130 steel (steel made in the 90's in a factory "Saut du Tarn" at 30km from my place.
Water selective quench without clay.
The length of the blade is 220mm, the height at the heel is 47mm, the thickness is 3.4 to 1mm on the spine before the tip, 188 grams.
The handle is octogonal, made of walnut burl and stainless steel bolster.
A light and nimble gyuto for general purposes in the kitchen. Nice convexity at heel and thin blade at the tip.
A particularly beautiful hamon on this blade with lovely activity.
