Santoku Nashiji

Forged in San Mai "dirty" wrought iron + 1.2519 steel core.

Nashiji finish. Stone shaped and stone polished bevels finished on natural Japanese stone from Nakayama in Japan.

The length of the blade is 168mm, the height at the heel is 49mm, the thickness is 5.1 to 1.4mm on the spine before the tip, 201 grams.

The handle is octogonal shape, made of gombeira and brass bolster

Short and nimble blade, this Santoku will be a easy blade to grab in a home kitchen. Lovely dirty wrought iron that have lot of texture and beautiful contrast with the hard steel. The cutting edge is made with 1.2519 tungsten steel : a lovely steel I use to get long lasting edges.
