Random Draw

This knife is available but sold by random draw. If you want to buy this knife, you just have to register in the following form. I will make a  random draw of all the people registered and will select the person who will be able to buy the knife.

 

This system allows my customers to acquire one of my knives without having the pressure to be the fastest. This is a first but I hope to repeat this type of sale in the future, about once a month.

Knife description :

Gyuto ​

 

Forged in San Mai, "dirty" wrought iron for the sides and 135Cr3 for the cutting edge.

Deep Etch finish on the top of the blade.

Stone polished bevels with Japanese natural stone.

The blade is 275mm edge, 54mm high at heel, 5.5mm at 1.2mm on the spine of the blade before the tip, 284 grams.

The handle is octagonal, made of Honduran rosewood and bronze bolster.

 

A great Gyuto for many tasks in the kitchen. A blade with a relatively straight profile, with a lot of strengh at the heel and finesse towards the tip. Grind is standard, not workhorse, not lazer but in between. The Deep Etch finish highlights the fibrous structure of wrought iron. Stone polishing provides a strong contrast between iron and steel. Honduras Rosewood, chosen for its color and its fibrous aspect (although the touch is very dense and soft), is a beautiful continuation of the fibering of the blade.
