Gyuto Honyaki
Forged with 135Cr3 steel
Selective clay quench in water. Very convex geometry. Semi-miror finish and a little patinated blade.
The length of the blade is 244mm, the height at the heel is 55mm, the thickness is 3.3 to 0.9mm on the spine before the tip, 265 grams.
The handle is octogonal, made of moon ebony from Laos and brass.
A blade I forged and quenched about a year ago. It is now a knife. It's not stone shaped but belt work and sanded to a semi-miror finish. The quenching line reveal some cool little details. It's quite a strong blade, workhorse style with a thin tip. The handle is removable with a pin, allowing to access the tang where signature is stamped.
Price: 1600 euros
