The Eminceur or Santoku is the knife for cutting vegetables. Shorter than the chef's knife, it will be more nimble and allows for very precise slicing. Its very high blade allows you to put your hand in contact for fast cuts. It can be used with a pendulum or hammer motion.
I chose to offer a Santoku as a knife in this range rather than the classic French slicer. The Santoku form seems more easy and confortable to me. But it is possible to make a French chef knife to order.
