Totsumen line

​Kitchen knives, also forged in San mai 3 layers, but fully polished. The general geometry is convex. The finishing is done on machine to obtain a satin finish.

Totsumen "凸面", means convex surface in Japanese. I have been working on this type of geometry for a few years, but working by hand on the sharpening stones. This work gave me the experience and precision necessary for this type of geometry: these knives are not only convex from the back to the edge, but also from the handle to the tip, so there is no hollow point or concavity: this type of geometry gives a particular cutting effect, very smooth with a good cutting sensation, while correctly removing food from the blade.
